Poke (pronounced POKE-AY, not POKE-EE) is served all over Hawaii, and now many cities throughout the mainland. Poke is a raw fish salad, traditionally made with ahi tuna or sashimi grade salmon, tossed with onions and a soy-sesame dressing. In Hawaii, there are many different types of poke made from a variety of seafood (Squid Salad is Popular!) and dressings. Poke shops mainly serve poke bowls, big bowls of rice or other bases like salad topped with a generous scoop of poke and your choice of toppings.
